Seaweed Gin:

Nose & Palate: Garden herbs and spices give way to an unmistakable saline minerality from locally foraged seaweed. Minty spearmint and lemon zest interplay with savoury juniper and peppery spice. A wisp of eucalyptus adds a subtle medicinal lift.

Finish: Brightly refreshing—“like how you would imagine a mermaid’s toothpaste to be”—smooth yet intriguingly complex.

Oak- aged Gin:

Maturation: Gin rested for six months in ex-bourbon single-grain whisky casks.

Nose: Fresh herbal juniper notes with a hint of dill.

Palate: Light green herbs and piney juniper, with gentle spice and a subtle dusty white-pepper note. Oak and sweet grain-whisky tones weave through.
