What you’ll need

- Strawberries (sliced)
- Sugar + water (to make a simple syrup)
How to make it
- Make a simple syrup by heating equal parts sugar and water until dissolved.
- Remove from the heat, add rhubarb and strawberries, cover, then chill until fully cooled.
- Add a little syrup to each glass, top with chilled fizz, then finish with sliced strawberries.

2) Blackberry & Thyme Champagne Cocktail

What you’ll need
- Champagne or sparkling wine (chilled)
