  • Sugar + water (to make a simple syrup)

How to make it

  1. Make a simple syrup by heating equal parts sugar and water until dissolved.
  2. Remove from the heat, add rhubarb and strawberries, cover, then chill until fully cooled.
  3. Add a little syrup to each glass, top with chilled fizz, then finish with sliced strawberries.

2) Blackberry & Thyme Champagne Cocktail
